Selected students will build upon their classroom studies through our Food & Beverage Internship program. The Food & Beverage Supervising Intern will experience firsthand the hospitality industry by supporting F&B management with daily operations in our F&B department. Interns will be exposed to and learn how Food & Beverage operates in and supports the functions of a 24-hour casino and resort. Interns will get immersed in Miccosukee Casino & Resort’s service-focused MICCO Way culture and learn how we deliver service excellence and the highest quality food and beverage service. Designed for students that are seeking to excel above their peers in the Hospitality industry with a focus on food and beverage, the Food & Beverage Supervising Intern will operate in a fast pace 24-hour industry learning what it takes to succeed and thrive. Accepted students will elevate their pathway to success right here at Miccosukee Casino & Resort.
Qualifications
- Undergraduate student or higher. Preferred focus on F&B or hospitality major.
- Validated by college/university.
- Fluent English speaking and written skills. Bilingual in Spanish preferred.
- Eligibility to work in the US.
- Available to work a minimum of 6 months, open to extension preferred.
- A passion for delivering memorable, impressive, caring, committed, and original service.
- Effective communication required.
- Intermediate math skills required.
- Be courteous and show genuine care for all co-workers and guest(s)
- Ability to work well in a team environment
- Must be able to handle a multitude of tasks in an intense, ever-changing environment.
- Maintain a professional appearance and manner at all times.
- Excellent guest service skills, as well as excellent communication skills.

- Maintain physical stamina and proper mental attitude while dealing effectively with guests, management, team members, and outside contacts while working under pressure and meeting deadlines
- Must be able to frequently move freely about the property, maintain manual dexterity to operate job related equipment, such as telephones, copiers, etc., withstand various activities such as frequent walking, and withstand prolonged standing, stretching, bending and kneeling without restriction
- Be able to work indoors and be exposed to various environmental contaminants including smoke
- Ability to lift or carry a minimum of 20 pounds unassisted in the performance of specific tasks assigned
- Must be able to work with others, communicate well, give direction, review the work of others, and provide guidance and counsel when needed to achieve department goals and objectives
- Must maintain a positive attitude toward work and interface with hotel guests in a congenial and polite manner
- Must be able to address stressful situations with clients with dignity and the utmost tact and politeness
- Must be able to touch and handle supplies in a safe and non-hazardous manner, maintaining proper hygiene, cleanliness, and disposal methods
Responsibilities
The primary responsibility of the F&B Supervising Intern is to support F&B management in overseeing day-to-day operations of the F&B department. The F&B Supervising Intern will be expected to provide effective strategic direction to ensure operational efficiency, highest standards of service and maximize profitability pertaining to the service within all Food & Beverage venues within the operation.
- Support the management of the F&B team to ensure mentoring meets Miccosukee Service Expectations
- Supports the overseeing of the day to day activities of the F&B department.
- Support the planning and scheduling employees in accordance with F&B departmental needs.
- Supervises F&B employees in accordance with facility policy and procedures
- Support the trains and coaches’ F&B employees
- Responsible for supporting shift scheduling including: work station assignments/rotations, employee training, employee breaks to ensure there is coverage based on forecasts.
- Makes adjustments as necessary during shift to assure completion of work assignments.
- Operates within Standard Operating Procedures (SOPs) and Job Safety Analysis (JSAs).
- Computes reports on operations.
- Organizes and supervises maintenance tasks related to all events scheduled during the year ensuring the completion of the work in time.
- Supports liquor controls and policies and procedures regarding alcohol sales and service levels.
- Maintain a comprehensive knowledge of all food and beverage selections available at all outlets.
- Support the coordination and ensures accurate monthly inventory, transfers, monitor/minimize waste, proficient beverage pars and weekly beverage orders.
- Ensures proper sanitation, preventative maintenance, and vendor support of all equipment, floor stations, bars, and storage areas.
- Adhere to the Miccosukee Service Expectations and ensure team compliance
- Monitor compliance with all aspects of Miccosukee Casino & Resort internal controls
- Maintain complete knowledge of and comply with all departmental policies and procedures
- Evaluate operating procedures, recommend changes, and implement approved changes
- Maintain confidentiality of pertinent casino data
- Maintain clear and open communication with guests, managers and team members
- Consistent and regular attendance is an essential function of this job
- Performs other related duties as assigned

While performing the duties of this job, the team member may experience temperature fluctuations and moderate to high levels of noise. This is a smoking environment.
