Position: Sous Chef

Location: MEZŌ Authentic Mediterranean Kitchen

Reports To: Executive Chef / General Manager

Position Overview

The Sous Chef plays a critical leadership role in daily kitchen operations at MEZŌ Authentic Mediterranean Kitchen. This position supports the Executive Chef in executing authentic Mediterranean cuisine with consistency, speed, and high standards of quality. The Sous Chef is responsible for leading the kitchen team, maintaining food safety and cleanliness, and ensuring smooth service in a fast-fine dining environment.

Key Responsibilities

  • Assist in overseeing daily kitchen operations, prep, and service
  • Lead, train, and motivate line cooks and prep staff
  • Ensure all dishes are prepared according to MEZŌ recipes, portioning, and presentation standards
  • Maintain strict food safety, sanitation, and HACCP compliance
  • Manage prep lists, inventory rotation (FIFO), and minimize waste
  • Step in as acting kitchen lead in the absence of the Executive Chef
  • Collaborate with management on menu execution, specials, and kitchen efficiency
  • Maintain a clean, organized, and professional kitchen at all times

Qualifications

  • 1+ years of experience in a leadership kitchen role (Sous Chef or Lead Cook preferred)
  • Strong understanding of Mediterranean cuisine and fresh ingredient preparation
  • Proven ability to lead a team in a high-volume environment
  • Knowledge of food safety standards and best kitchen practices
  • Strong communication, organization, and time-management skills
  • Ability to work nights, weekends, and holidays as needed
